NOMA-DK.org was established in 2018 by a group of former Michelin-starred chefs, food critics, and culinary academics who saw a need for more transparent and expert-driven restaurant reviews in the Nordic and European dining scene.

Our founders, led by renowned chef Henrik Jørgensen and food journalist Isabella Thorsen, wanted to create a platform where culinary expertise met journalistic integrity – a place where readers could find honest assessments based on deep knowledge of cooking techniques, ingredients, and traditions.

How we ensure fair, expert, and consistent restaurant evaluations

Rigorous Standards, Transparent Process

At NOMA-DK.org, we believe that meaningful restaurant reviews require both culinary expertise and methodical evaluation. Our review process is designed to provide readers with assessments that are thorough, fair, and consistent.

Multiple Anonymous Visits

Each restaurant is visited at least twice by different team members, at different times and days, to ensure consistency. All visits are conducted anonymously, with reservations made under different names.

Comprehensive Evaluation Criteria

We assess restaurants across multiple dimensions: food quality and execution, service, ambiance, value for money, and overall dining experience. Each category is rated on a 10-point scale.

Expert Panel Review

After individual visits, our team meets to discuss findings and compare notes. Final ratings are determined through consensus, drawing on each reviewer's area of expertise.

Contextual Consideration

Restaurants are evaluated within their appropriate category and price point. A neighborhood bistro is not held to the same standards as a fine dining establishment, but excellence is expected at every level.
